To make a unique Nordic gin as a tribute of Danish capital, Nordic Gin House developing team, Jeppe Nothlev (European best bartender and head bartender of Ruby) , Jakob Kocemba (owner of Sparkling tea, member of London Sommelier Society), Steinar Jensen (Owner of Cocktail Expressen and head trainer for Diageo), Jon Bertelsen (Master Distiller , Det Norske Brenneri), Mats Lihnell ( Master Distiller Bergslagens Distillery), David Asmussen (MarketWatch) together with Jakob Vallentin took the challenge, working with serval of quality distillations and combination. At the end the team agreed on final combination, 7 month later.

Final results

København Klassisk Gin, distilled with Danish distinction. The brand carries one of the highest levels of juniper berries in the world delivering flavor the original way. The creatively craft small batch gin is a modern variation over a classic theme, the distillation process and its micro vaporization brings out the best of the Nordic spruce, juniper, citrus and licorice root in a unique combination. The bottle is inspired by traditional pharmacy bottle, a premium and distinct look that capture the simplicity and minimalist design heritage of Denmark.

Process/Production

We order all spices dry except the lime peel and lemon peel, which is purchased fresh from the local food store. We are working on our 3-step maceration procedure, where only juniper berries are still added to the wheat spirit, diluted to 48%. This first bleeding takes place for 24 hours and is partially heated. After 24 hours, we add coriander and allow the bleeding to continue for 18 hours. After we heat it up to approx. 72 degrees Celsius, soak the rest of the spices for approx. 3 hours before the temperature goes more than 78.3 degrees Celsius and the procedure distillation is started. The distillation takes about one business day, so the total procedure takes about 53 hours.After adding the distillation, water and spirit to dilute the gin just above the correct ABV and taste. The København Classic Gin can rest for about 10 days in a marriage tank to weld the final flavor.

The licorice and pine essences are extracted from natural pine and licorice root. That pine easily takes up a lot of space in the flavor spectrum of gin, so to provide a controlled and balanced space for juniper we thought that pine essence was the best way to put it into the mix.

The reason we use dry licorice root and licorice essence in maceration is simply because we tried different combinations, and the version with both had the smoothest taste.
