Base wine: Made only from flower must obtaining by slow pressing at low pressure.
Static settling low temperature within the first 24 hours.
1st Fermentation: At 13º C in stainless steel tanks. Beforehand the must is macerated with the skin for the exact time required to achieve the desired pink colour.
2nd Fermentation: At least 2 years in bottles (stacked horizontally) in
underground cellars at a natural and constant temperature of 13ºC.

Total tartaric acidity: 6.2 g/l
Pressure in bottle: 5.4 atmospheres.
Alcohol: 11.5% vol.
Serving temperature: from 4ºC to 6ºC.
Organoleptic characteristics: It presents a pale, delicate pink.. Small persistent bubbles in fine strings, excellent vertical release and crown. Clean, intense aroma of aging on lees with a fruity background, reminiscent of fruits of the forest, with a highly complex aroma. Sweet and full-bodied giving a balanced combination that is harmonious, complex and elegant. Very attractive with an extensive finish.
Cava and food pairing: Goes well with appetizers, hors d?oeuvres and starters such as melon with ham,. Also cold meats with Catalan tomato on bread or, for example, cod with ratatouille or fillet of duck and cranberry sauce. Equally suitable as an aperitif and with some dark bitter chocolate desserts.
