Wine production:Single-varietal wine from Hondarrabi
Zuri, selection from the oldest plots,
hand picking into small crates, second
selection on selection table, stemming
and cold maceration, greater
proportion of flower must produced in
gravity maceration, static must racking,
fermentation under controlled
temperature, left for 4 months with
weekly lees stirring, and inerting,
stabilization and microfiltering process.
Tasting notes:
Clean and bright. Straw yellow colour.
Intense varietal aromas, with
predominant white, citrus and stone
fruit overtones. Fresh in mouth,
buttery, harmonious and balanced,
long, persistent aromatic finish, with
slightly acidic and mineral overtones
from the soil.
Grape varieties:
Hondarrabi Zuri 100%.
Recommendations:
Serve cold in a glass, at around 6º-
8º, ideal for pairing with oyster, goose
barnacles, quisquilla (small shrimp)
and cold txangurro, and with fried
hake or monkfish dishes. It also pairs
well with sheep s milk cheeses, such
as Idiazabal.
