Appearance. Transparent, clear and bright sparkling wine with a straw yellow hue and greenish flashes. Persistent medium-sized

trail of fine beads that form a lavish cordon de mousse on the wine surface that confirms the Champenoise method.

Nose. Elegant and fairly expressive; fruit-driven, with highlights of pears, green apples, citrus and lees.

Palate. Dry and fresh with an ample attack; highlights of lees during the aftertaste; elegant perlage with a medium attack.

We are a Mexican Winery, product quality is our main concern, meeting all necessary requirements to obtain excellent wines, from harvesting up until the bottle reaches the customer. Our cellar (25 m deep, one of the deepest in Latin America) preservers natural conditions, favoring both the second fermentation within the bottle, a characteristic feature of the traditional method, and the ageing of our still wines. Still wines are fermented in stainless steel vats at controlled temperatures and aged in French and American oak, and European acacia -the latter shows great respect for fruit evolution, contributing with a light layer of tannins, all while keeping the predominance of subtle floral notes, highlighting freshness and lightening acidity in white wines.
