Denomination of origin: Cava

Bottling Date: April 2008

Coupage: 36% Macabeo, 50% Xarel·lo, 9% Parellada, 5% Chardonnay.

A perfect blend was achieved between traditional varieties, that give it elegance, and Chardonnay which brings a fruity touch, enhances the aromas and rounds off the bouquet.

Organoleptic characteristics: Pale straw yellow in colour. Abundant tiny bubbles forming very fine, regular and persistent strings. Very clean, powerful and classic on the nose. Fine aromas of long ageing on lees with a fruity background, delicate pastry notes, slightly toasty and a hint of smokiness. Flavoursome and smooth on the palate, very balanced and intense flavours. Elegant and light but with body, which embraces a very balanced acidity. Broad and complex finish.

Base wine: Made only from free-run must. As the grapes were harvested at the optimum point of ripeness and sugar-acidity ratio, subsequent corrections in the winery were unnecessary. It is therefore a completely natural cava with no dosage.

1st Fermentation: At 13ºC in stainless steel tanks.

2nd Fermentation: Up to 6 years in bottles in 12 m deep underground cellars at a natural and constant temperature of 13ºC.

Residual sugars: 0.7 g/l

Total tartaric acidity: 6.3 g/l

Pressure in bottle: 5.2 atmospheres.

Alcohol: 11.5% vol.

Serving temperature: from 6ºC to 8ºC.

Numbered Reserva of 6.100: This limited production is obtained from vines situated at an an altitude of 500 m. where the microclimate confers special characteristics to this "CRU." As a millésimé, it is only produced in exceptional vintage years.

Cava and food pairing: Excellent as an aperitif and also for drinking on its own because of its distinguished character. It goes well with foie gras, white fish, mild smoked food, carpaccio, roast beef and poultry.
