Coupage : 60% Macabeo, 15% Xarel·lo y 25% Parellada.

Base wine: Made only from the first pressing after a careful study of a special blend with aromas and aftertaste that are characteristic of a Gran Reserva but with the strength of a young cava. The yield from the press is only 52%, in order to obtain a premium quality must (pneumatic press). As the grapes were harvested at the optimum point of ripeness and sugar-acidity ratio, subsequent corrections in the winery were unnecessary, resulting in a completely natural cava.

1st Fermentation: At 13ºC in stainless steel tanks.

2nd Fermentation: At least 2 years in bottles (stacked horizontally) in 15 m deep underground cellars at a natural and constant temperature of 13ºC.

Type of bottle: 75 cl. and 37.5 cl. champagne

Residual sugars: 2.6 g/l

Total tartaric acidity: 5.5 g/l

Pressure in bottle: 5.6 atmospheres

Alcohol: 11.5% vol.

Serving temperature: 4ºC - 6ºC

Organoleptic characteristics: Bright straw yellow with light golden tones. Abundant small bubbles, vertical and regular release, forming a good crown. Intense and clean aroma of aging on lees with a fruity background. Full-flavoured and elegant on the palate thanks to an excellent balance. Good persistence and extensive finish with well harmonized fruit tones that are reminiscent of fresh apples.

Cava and food pairing: Fine accompaniment for seafood and casseroled or grilled white meats. An alternative to Brut Nature since it maintains optimum quality but with a slightly more recent vintage for those who prefer the strength of a younger cava.
