Tasting notes of winery's winemaker

To the north of the province of Burgos and on the banks of the Ebro, for centuries there has been a wine tradition strongly rooted in the development of a type of wine historically known as Chacolí.

After a careful harvest in boxes of 15 kg, the grapes enter the winery where after passing through the selection table makes a slight maceration. Then the must is carefully decanted in cold to proceed to its slow fermentation in stainless steel tanks, at a temperature of 15ºC, for 20 days. After the alcoholic fermentation the wine was kept with its fine lees in suspension for a month applying the bâtonnage technique in stainless deposits. Once racked and subjected to a process of natural clarification, the wine is bottled for later release to the market.

Pale yellow wine with greenish reflections, clean and bright. On the nose unfolds gradually and elegantly frank aromas of fruits and flowers. The palate is fresh with a slight acidity that provides balance. End of mouth pleasant, soft, where fruit sensations are again perceived and also a slight itch due to the carbonic remains that highlight its natural freshness.

Accompanies appetizers, light entrees, skewers, tapas, white fish, seafood, fresh cheeses.
