Tasting notes of winery's winemaker VINIFICATION: Fermentation grapes chilled to 4ºC, de-stemmed and fermented in 300- litre open barriques. Temperature control unnecessary under these condi¬tions. Maceration manual punching down 3 times a day for 12 days. Wine is run off by hand. Malolactic fermen-tation in closed oak barriques. AGEING: New barriques: 100% fine-grained French oak Toasting: medium to high toast Ageing: 15 months in barrique TASTING NOTES APPEARANCE: Highly intense ruby hue, deep bodied and with a lively gleam given its concentration NOSE: Good initial varietal expression, with fresh cherry and dark fruit notes (plums, sloesâ¦). As it develops, the overriding aroma of fresh fruit persists, which together with the balsamic notes typical of the region give great complexity with undertones of cocoa and dried fruits, overlaid with a sensation of minerality. PALATE: Intense impression of fresh fruit and great complexity from fresh fruit flavours to aromatic coffee and spice notes (cardamom). Long-lasting with persis¬tent finish while remaining fresh, overlaid with lightly toasted sweetish notes from the barrique.
